Sopes with Butter
I fill them with picadillo or refried beans.
Steps

Peel the potatoes and mash them very well with a potato masher or a bean masher.

Add the melted butter when both are warm and mix in the salt.

Add the masa and baking powder, then knead very well. Add water as needed until the dough no longer sticks to your hands and you can form thick discs.

Heat a griddle or skillet. Shape the dough into thick discs (gorditas) and cook them on both sides. Let them cool slightly, then pinch the edges on one side to form a rim. Let them cool.

Add a little oil to a skillet, place the sopes in the pan, and fill them with your choice of filling.
