Chocolate Ganache Bars

Yes. It looks daunting with that number of eggs but so worth the effort. Mmmmm.
An explanation of the cake: two layers - bottom is the almond flour cake part - the top is a chocolate 'icing' so to speak.

Steps
- 1
Separate the 13 eggs into two bowls setting aside the yolks for the chocolate batter.
- 2
Whipp the egg whites until it forms stiff peaks
- 3
Mix the almond flour and sugar together in a separate bowl
- 4
Fold in the almond+sugar mixture into the egg whites very slowly
- 5
Smooth it out onto a cookie sheet and bake for 1/2 hr on 350°
- 6
Add the yolks, vanilla, sugar, coffee in a separate bowl and whip until thick and custard-like. Set aside.
- 7
Melt the chocolate & coconut oil and mix (with spatula) into the yolk mixture slowly so the eggs do not curdle/bake.
- 8
Take cake out of the oven and pour the chocolate mixture on top of the cake and immediately, before the chocolate sets, bake for 4-5 minutes and then freeze for added deliciousness.
- 9
Congratulations for keeping with the many directions! Enjoy!
