First of all wash chicken thoroughly with water and pat it dry with a kitchen towel. Now transfer to a bowl and add all the ingredients of the marination section. Combine all the ingredients very well. And keep aside for 4-5 hours in the refrigerator.

Now take a wok or kadai heat it well. Immediately add butter and ghee. Add julienned ginger and sliced garlic and bay leaf. Now transfer the marinated chicken to the wok and saute it at high flame. Cook till tender. Do not overcook the chicken.

Now transfer to the serving dish and add 1 tbsp fresh cream and ghee again and combine well. Bast, it with coal and ghee to give smoky flavor. (Here I have not used charcoal as I don't have). So I have grilled it at the gas stove. Serve hot. Sprinkle some chaat masala.
