Shrimp fritters are a classic dish from Cádiz and can be enjoyed year-round at any beach bar. They're also a traditional treat during Carnival in Cádiz.

Finely chop the onion and cilantro. Crush the dry saffron threads in a mortar and pestle, then add water and mix well.

Gradually add the chickpea flour, mixing until you have a batter that's not too thick. Add 1 1/2 tablespoons of the chopped onion and a pinch of cilantro. Let the batter rest for a bit.

Cut squares of parchment paper. Place a spoonful of batter on each square and use a spoon to spread it into a round, thin pancake. Distribute the shrimp evenly over the fritters, pressing them gently into the batter.

Heat olive oil in a pan. Carefully flip the fritters and place them in the hot oil (the parchment paper should stay outside the oil). When one side is golden, remove the paper and fry the other side until golden brown.
