Cooking Instructions

Preheat the oven to 350°F (180°C), using both top and bottom heat. Peel and clean the potatoes, then slice them very thinly (a mandoline works best). Peel the onion and cut it into thin strips. Crack the eggs into a large bowl, season with salt, pepper, and nutmeg to taste.

Add the cream and whisk until well combined. Grease your baking dish with olive oil. Arrange a layer of potatoes in the dish and sprinkle with a little salt. Repeat to make two layers of potatoes on the bottom. Spread half the onion over the potatoes and season with salt. Add half the bacon, then sprinkle half the cheese evenly on top.

Pour half the egg and cream mixture over the layers. Repeat the process: add one more layer of potatoes with a pinch of salt, the remaining onion with salt, the rest of the bacon, and the remaining cheese. Drizzle with a bit more of the egg and cream mixture. Top with a final layer of potatoes, a pinch of salt, and pour the rest of the egg and cream mixture over the top. Sprinkle with a little more cheese.

Cover with aluminum foil and bake for 35 minutes at the same temperature. Then remove the foil and bake uncovered for about 20 more minutes, or until a knife slides in easily. It’s ready to enjoy. Give it a try—you’ll love it!
