This morning I woke up hungry and made myself this hearty breakfast.

Heat the olive oil in a skillet and sauté the onion and garlic until softened, but not browned. Add the bell peppers and sauté.

Add the cilantro and beaten eggs, stir, and cook until just set. Don’t overcook. Lay the flour tortillas on the counter and spoon the scrambled eggs onto the lower half of each tortilla. Sprinkle with cheese and roll up. Add a little oil to a clean skillet and brown the flautas on all sides.

Serve the flautas with guacamole or mashed avocado and pico de gallo or pebre. You can serve the flautas whole or cut in half.
