Ingredients

  • 1 cupalmond flour (about 100 grams)
  • 3/4 cupflaxseed meal (about 100 grams)
  • 1/4 cupcoconut flour (about 35 grams)
  • 2 tablespoonspsyllium husk or 1 teaspoon xanthan gum
  • 1 teaspoonsalt
  • 1 cupwarm water or more as needed (about 250 ml)
  • 2 tablespoonsolive oil

Steps

  1. 1

    Mix all the dry ingredients together. Then add the hot water and mix well. If the dough is too dry, add more water as needed.

  2. 2

    Add the olive oil and mix until you have a workable dough.

  3. 3

    Divide the dough into balls and shape them into tortillas (make them thicker for sopes). Cook on a griddle or skillet for 3 minutes on each side. For sopes, pinch the edges while still warm before they cool.
