So, my cousin and I have been baking via WhatsApp video calls during this quarantine period. We decided to make this today as we haven't had it for a long time. And we have all the time now.

This is a South African pudding, and my oh my it is delish. Really gooey and sweet. BUT! I will not be making it again in a hurry, it's a guilty pleasure that I will only indulge on Christmas day, as I will not be counting any calories on that day.

Be brave and try this pudding, if it doesn't give you a sugar coma, it will knock you off your feet.

Ingredients

5-6 servings
  • Sauce
  • 1 1/2 Cupsdouble cream
  • 1/2 Cupbutter
  • 3/4 Cupdark brown sugar
  • 1/4 tspsalt
  • 1 Tbspfine apricot jam
  • Batter
  • 2 Tbspbutter
  • 1/3 Cupdark brown sugar
  • 3 Tbspfine apricot jam
  • 1egg
  • 1 tspbicarbonate of soda
  • 1/2 Cupmilk
  • 1 cupcake flour
  • 1/4 tspsalt
  • 4 tspvinegar

    Preheat oven to 180°C.

    In a sauce pan, place all the sauce ingredients and stir continuously over high heat and bring to a boil.

    Once boiling, reduce the heat and leave to simmer for 5 minutes or till you have a glossy sauce.

    Remove from the heat and keep warm.

  5. 5

    For the batter, Cream butter and sugar together until the butter is pale and soft.

  6. 6

    Beat in the apricot jam, then add the egg and beat till well combined.

  7. 7

    Combine bicarbonate of soda and milk till soda dissolves.

  8. 8

    Sift flour and the salt together and add to the batter, alternating with the milk. Beat in vinegar till well combined.

    Pour batter into a greased ovenproof bowl and pour half the sauce over the batter.

    Bake for 45 minutes or until nicely browned.

    Remove from oven and pour over the remaining sauce a little at a time until all sauce is absorbed.

    Serve hot with cream, custard and ice-cream.
