Ingredients

Serves 4 servings
  1. 7 ozdark chocolate (70-80%) (200 g)
  2. 2 tablespoonsmilk
  3. 1/3 cupheavy cream (about 100 ml)
  4. 1 1/2 tablespoonsbutter (20 g)
  5. 3eggs

Steps

    Chop the chocolate with a knife and place it in a large bowl.

  2. 2

    Bring the milk and cream to a boil. Pour the hot liquid over the chocolate, whisking to combine, then add the butter in small pieces while the mixture is still warm.

  3. 3

    Separate the eggs, placing the yolks into the chocolate mixture. Beat the egg whites until stiff peaks form.

  4. 4

    Gently fold the beaten egg whites into the chocolate mixture in three additions, using a silicone spatula to keep the mixture light and airy.

  5. 5

    Divide the mousse into small glasses or bowls and refrigerate for 4 hours to set.
