In a sufuria saute onions till brown, add in crushed garlic. Add in grated carrots and tomato.

Add in your peeled and diced potatoes and salt. Let it cook down then add in water. Cook till tender and then add parsley.

As you serve sprinkle paprika and black pepper on top
