Ingredients

  • 2 tbspmiso paste
  • 300 gshiitake mushrooms
  • Eggs
  • 3 cmGinger
  • Soy sauce
  • Udon noodles
  • 750 mlboiling water
  • Spring onions

Steps

  1. 1

    Boil the water. Add miso paste and ginger. Reduce for 5 mins.

  2. 2

    Add mushrooms and a dash of soy and the udon noodles. Cook for 1 min.

  3. 3

    Place spinach in the bowl and poach the eggs. Serve and slurrrppppp.
