Wet fried Matumbo

Ingredients

  1. 2 kgmatumbo
  2. Water as required
  3. 2onions
  4. Garlic
  5. Hoho
  6. Pinchsalt
  7. Coriander
  8. 3big tomatoes
  9. Cooking oil to deep fry
  10. Cooking oil to cook

Cooking Instructions

    In pressure cooker boil the matumbo till soft like 1hr.

    Drain excess Water and keep aside.to use as stew

  3. 3

    Heat oil and deep-fry.till brown and set aside

  4. 4

    Cook onion till light add garlic and cook add tomatoes and let them cook add hoho

  5. 5

    When well cooked add the matumbo stir well if you want wet like me add the water that you strained in step number one.garnish with coriander. Let it simmer and serve with ugali
