Mix all the ingredients together thoroughly.

Refrigerate until the mixture firms up and is easy to shape.

Shape the mixture onto skewers for kebabs or traditional kofta skewers.

Bake in a preheated oven at 350°F (180°C) for 25 minutes.

As soon as they come out of the oven, place a piece of hot charcoal in the center of the kofta, put it inside an onion peel, and drizzle with oil.

Cover well for five minutes to infuse a smoky flavor, then transfer to a serving plate with chopped parsley and serve.
