Ingredients

  1. 1 3/4 poundsground lamb (about 800 grams)
  2. 1/2 poundbeef fat (from the butcher, about 250 grams)
  3. 2onions, finely chopped (use only the pulp, without the juice)
  4. Salt
  5. Black pepper
  6. 1 bunchparsley, finely chopped

Steps

    Mix all the ingredients together thoroughly.

  2. 2

    Refrigerate until the mixture firms up and is easy to shape.

  3. 3

    Shape the mixture onto skewers for kebabs or traditional kofta skewers.

  4. 4

    Bake in a preheated oven at 350°F (180°C) for 25 minutes.

  5. 5

    As soon as they come out of the oven, place a piece of hot charcoal in the center of the kofta, put it inside an onion peel, and drizzle with oil.

  6. 6

    Cover well for five minutes to infuse a smoky flavor, then transfer to a serving plate with chopped parsley and serve.
