In the summer, make a big pot of winter melon tea and keep it in the fridge to enjoy anytime. It's refreshing and helps cool you down. The skin, pulp, and seeds of the winter melon are very useful. Adding barley helps reduce water retention.
Cooking Instructions

Rinse the winter melon and cut it into pieces with the skin, pulp, and seeds. Soak the pearl barley in water for 1 hour. Prepare the dried honey dates and set aside.

Place all the ingredients in a soup bag and put it in a large pot. Add the water. Bring to a boil, then reduce to medium heat and simmer for 1 hour. Add the rock sugar and stir until dissolved, then turn off the heat.

Let cool, then refrigerate. Serve chilled whenever you like.
