Ingredients

  1. Winter melon, 4.8 lbs (about 2200 grams)
  2. Pearl barley, 2/3 cup (about 150 grams)
  3. Water, 34 cups (about 8000 grams)
  4. 5 piecesDried honey dates,
  5. Rock sugar, 2/3 cup (about 120 grams)

Cooking Instructions

    Rinse the winter melon and cut it into pieces with the skin, pulp, and seeds. Soak the pearl barley in water for 1 hour. Prepare the dried honey dates and set aside.

    Place all the ingredients in a soup bag and put it in a large pot. Add the water. Bring to a boil, then reduce to medium heat and simmer for 1 hour. Add the rock sugar and stir until dissolved, then turn off the heat.
