  • 2 tbspfresh ginger
  • 2 1/2 cupwater plus 1/4 cup
  • 1 tsplemon juice
  • 1 tsplemon zest (1/2 lemon)
  • 1 tsphoney

    Peel and thinly slice ginger.

    Pound to break apart with mallet.

    Grate the lemon.

    On high heat, add ginger, lemon zest and lemon juice to water and bring to boil, then reduce heat, but maintain a slow boil for about 10 minutes.

    Drain.

    Add 1/4 cup water.
