In a pot over medium-high heat, add the 2 cups of water, butter, sugar, and salt. While the butter is melting, sift the flour. Once the butter has melted, add the flour and mix until there are no lumps and you have a smooth dough. Turn off the heat.

Beat the two eggs and add them to the dough, mixing until fully incorporated. If the dough is still a bit dry, add melted butter until you reach the desired consistency. Make sure to do this step with the heat off.

You should have a soft, smooth dough that you can hold in your hands without it sticking. Let it cool for about 30 minutes.

Transfer the dough to a piping bag fitted with a churro tip and pipe churros to your desired length. Fry them for about 4 to 5 minutes or until golden brown.

Remove the churros and sprinkle with sugar and cinnamon. (You can also drizzle with sweetened condensed milk if you like.)
