On hot summer days, lemon granita made with organic fruit is always an ideal solution.

Wash both lemons: grate the zest from one, and remove just the yellow part of the peel from the other and set it aside.

Juice the lemons. Add the grated zest to the lemon juice.

Meanwhile, dissolve the sugar in the hot water along with the yellow lemon peel.

Once the sugar water has cooled, strain it to remove the lemon peel, then add it to the lemon juice and grated zest.

Pour the mixture into a shallow container and place it in the freezer, stirring every hour until it solidifies.

Scrape the surface with a spoon and serve the granita in glasses.
