Gajar Halwa Muffins

For many South Asian families, gajar halwa is more than just dessert — it’s tied to winter evenings, festive gatherings, and handwritten recipes passed down through generations. Now imagine those same flavours transformed into soft, fluffy muffins fresh from the oven.
Here I repurposed leftover Gajar Halwa into muffins. This type of bake is both familiar and novel at the same time.
These muffins are special because of their balance. They are not very heavy, yet they have the sweetness and texture of gajar halwa. They can be enjoyed as an afternoon snack or with coffee or chai. They are warm, fragrant, somewhat spicy, and full of the nostalgic aromas of traditional carrot halwa.
They seem decadent without the need for elaborate decoration because of their inherently rich and fragrant flavour profile. They can be exquisitely elevated with just a light saffron glaze, pistachios, or almonds.
These muffins will make you feel instantly at ease if you grew up enjoying warm bowls of gajar halwa. Additionally, they provide a delectable introduction to one of the most famous South Asian desserts—with a soft, buttery twist—for people who are unfamiliar with those flavours.
