Strip 2 handfuls of moringa leaves from the stem.Wash, drain water and dry.Assemble all ingredients required to make the soup.Soak moong dal for 20 minutes. Drain water.Heat ghee in a pressure cooker.Sprikle cumin seeds and whole black peppercorns.When they splutter, add bay leaf.Now add chopped onion.Saute till translucent.Next add ginger garlic paste and saute for 1 minute.Add soaked moong dal, chopped carrot and potato.Add salt to taste, 1/4 tsp sugar and toss to mix well.

Add the moringa leaves and 2 cups water.Close lid and pressure cook upto 3 whistles.Allow pressure to release on its own.

Strain the soup.Let it cool for about 10 minutes. Puree the mixture in a blender.Strain the mixture using a fine mesh strainer to separate the fiber and other solids from the pulp. Add the stock. Mix well. Add the sweet corn kernels and boil for 2 minutes. Adjust thickness by adding some more water, if needed.Add roasted cumin powder, garam masala, black pepper powder, lemon juice and 1 tsp ghee.

Serve hot garnished with some moringa leaves.Sip a cup of immunity boosting healthy moringa soup as it is or with toasted bread or bread sticks in breakfast or as an appetizer before a meal.
