Ingredients

6 burritos
  1. 2.2 lbspotatoes, diced
  2. 7tomatoes, diced
  3. 5eggs
  4. 1/2onion, sliced
  5. 1 tablespoonbutter (15 grams)
  6. Enough oil
  7. Salt and pepper to taste
  8. 1serrano pepper, finely chopped
  9. 3 clovesgarlic, finely chopped
  10. 5 slicesham, diced
  11. 6flour tortillas for burritos (you can also use regular flour tortillas, but you'll get more burritos)

    In a large pan (with a lid), add a splash of oil and butter, and let it melt.

    Then add the onion and garlic, sauté for 2 minutes, and add the potatoes (stir). Cover and cook for 40 minutes on low heat (stir occasionally). After 40 minutes, add the tomatoes, pepper, and ham. Stir and season with salt and pepper to taste.

    Cover and cook for another 20 minutes or until the potatoes are done (stir occasionally). Increase the heat to medium and add the eggs to the potatoes, stirring until the eggs are fully cooked. Turn off the heat and set aside.
