The star of this leftover wonder is the salsa. I was just hungry for fresh. Fresh something. I had a small pineapple from my yard and some jalapeño from our pepper plants. I was trying to use up things that were going south. So we fired up the grill and had a feast.

Ingredients

4 servings
  1. 1 1/2 lbmahi mahi filets
  2. Olive oil
  3. Salt pepper garlic powder and old bay
  4. Corn tortillas
  5. FOR THE SALSA:
  6. 1/2a fresh pineapple, cleaned and diced small, or you could use canned. I recommend pineapple tidbits
  7. 1/2a vidalia onion diced small
  8. 1mango, cleaned and diced small or use canned and dice it small
  9. 1jalapeño, seeded and diced small
  10. small handfulcilantro, chopped
  11. to tasteSalt pepper and a good dash of old bay
  12. Juice of 1 lime
  13. 1 tbspsugar

Cooking Instructions

  1. 1

    I made the salsa first. Chop everything and throw it in a bowl. Season it and put it in the fridge.

    Brush olive oil on your filets and add your seasonings to both sides. Cook on a hot grill until cooked through. Lightly toast your tortillas on the grill.

    Lay your fish on the tortilla and a spoonful of the salsa. I made my Tangy Slaw to put between the fish and the salsa. Dig in!!

I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
