I'm a huge believer in microwaveable rice, especially when it's a side for something that cooks quickly such as a frying steak or fish. There's no point spending all that cooking time on something that can be on the table in 10 minutes! But when it's something slowcooked, well you may as well make it yourself! You can start this rice an hour before your curry is ready to serve and it goes perfectly with a tikka, korma or a balti!

Ingredients

50 minutes
4 servings
  • 1 tbspoil
  • 1 tspcumin seeds
  • 1 tspground turmeric
  • 5cardamom pods, cracked (just put a bit of pressure on them)
  • 1small cinnamon stick
  • 1chopped onion
  • 200 g (1 cup)dry basmati / long grain rice
  • 2bay leaves
  • 480 ml (2 cups)vegetable stock

Steps

50 minutes
  1. 1

    Pour the oil into a pan and heat over medium - high

  2. 2

    Add the cumin seeds, turmeric, cardamom pods and cinnamon stick and stir-fry for 30 seconds

    Add the onion and fry a further minute, always stirring

    Add the rice and stir until well coated in the oil and spice mixture

    Now add the hot stock and bay leaves. Bring to the boil then turn down to the lowest heat setting and put a lid on the pan

    Let it simmer gently, covered for 25 minutes, undisturbed

    Then remove from the heat, fluff up with a fork then replace the pan lid and let the rice sit for 15 minutes

    Remove the cinnamon stick, bay leaves and cardamom pods before serving
