Trim the liver by removing any tough membranes or veins with a sharp knife. Season the liver with salt, pepper, half the garlic, and half the chopped thyme.

Heat a skillet with the olive oil. Sear the liver on both sides until browned. On one side of the skillet, sauté the mushrooms with the onion, the remaining garlic, and the rest of the thyme. Season the mushrooms with a little salt to taste.

Serve the liver with the mushrooms.
