Steps

First take mixing bowl add curd and ghee whisk it well to make a smoth paste.

Now take mixing bowl add refined flour baking soda nutmeg powder cardamon powder and Knead dough with curd or ghee paste.rest it for 10 mins.

Mean while make sugar syrup. In a pan add sugar water, kesar and lemon juice boil until becomes little thick.

Now mash your dough and divide in equal parts to make small rolls and press it to make a hole in the middle of rolls.

Now fry your balushahi in oil or ghee,low over heat flame.Don't turn or touch again and again after, cooking it will float in ghee. When you see it's floating,Now it's time to turn balushahi.

When you see golden brown colour of Your rolls it means balushahi is ready.

Now put in sugar syrup.After staying in sugar syrup for a while, remove Your balushahi on the plate.

Your balushahi is ready to serve garish it with pistachios.
