Pork Cheeks in Pedro Ximénez Sauce (Grandma's Style)

Thanks to my friend Susana, who shared this recipe with me. I made a few small changes, but the essence of the dish remains the same. This is a wonderful dish you can make for a special occasion or a family meal.

Trim the fat from the pork cheeks and season with salt and pepper.

Sear the pork cheeks in a little olive oil in the pot you’ll use, then set aside.

Chop the vegetables and sauté them in the same oil.
- 4
When the vegetables are soft, return the pork cheeks to the pot and stir gently.

Add the red wine and Pedro Ximénez sherry, and let it reduce.
- 6
Add the beef broth and cook over very low heat with the pot covered until the pork cheeks are tender and easily pierced with a knife (at least one hour).

Remove the pork cheeks from the sauce.
- 8
Reduce the sauce further if needed.
- 9
Blend the sauce, strain it, and adjust salt if necessary.

Return the pork cheeks to the sauce.
