Japanese Mayonnaise and Curry flavour are a good match. One example is my ‘Curry Flavoured Smoked Sausage & Potato Salad’ that I cook quite often. This Egg Salad is perfect for sandwich filling. You may wish to cut Eggs into larger pieces to make a side dish. Boiled Cauliflower or Potatoes can be a good addition to this salad.

Ingredients

2 servings
  • 2Boiled Eggs *finely or coarsely chopped
  • 1 tablespoonfinely chopped Onion
  • 1 tablespoonfinely chopped Parsley
  • 1-2 tablespoonsJapanese Mayonnaise
  • 1 teaspoonCurry Powder
  • 1 tablespoonfinely chopped Pickled Cucumber *optional
  • Salt & Pepper

Steps

  1. 1

    Cut Boiled Eggs finely, coarsely, or even into chunkier pieces depending on how you eat this salad.

  2. 2

    Add all other ingredients and mix to combine. Season with Salt & Pepper to taste.
