Biryani comes from the Persian word "𝐁𝐢𝐫𝐢𝐲𝐚𝐧" which means to fry. Traditionally biryani was made with meat and it was shallow fried & then rice was added.So technically #𝐕𝐞𝐠𝐁𝐢𝐫𝐲𝐚𝐧𝐢 is a much younger version of it !!⁣

This flavorful biryani is full of fresh Indian flavours, is quick to make and cooks in a single pot with marinated Cauliflower,carrot & beans followed by indian spices!! ⁣

This is not ‘Pulav’ that is actually shortcut & for easy dinner but this veggies biryani is something different & packed with many flavours!! ⁣

Ingredients

1 hour approximately
3 -4 people
  • For Marination
  • 2 cupsCauliflower florets
  • 1 1/2 cupCarrot diced
  • 1 cupGreen Peas
  • to tasteSalt
  • 1 teaspoonTurmeric powder
  • to tastered chilli powder
  • 2 inchCinnamon sticks
  • 4-5Cardamom
  • 1 teaspoonCumin seeds
  • 1 teaspoonGinger Garlic paste
  • 2Green chillies
  • 2 cupYoghurt
  • Rice
  • 2 cupRice (soaked in water)
  • 2 tbspOil
  • 2 tspFresh Mint leaves
  • 2sliced and fried onions
  • pinchSaffron thread (dissolved in 2 tbsp milk) for colour

Steps

    In a bowl mix all the ingredients under marination except for green peas, oil and onions. Keep it aside.(at least 1/2 to 1 hour)

    In a deep pan heat oil and add onions. Brown the onions and then strain them removing the oil. Add the fried onions back to the pan along with 3tbsp of the strained oil. Keep the remaining oil on the side. Add the marinated veggies on to the onions and give a quick boil and cook for 4 mins. Turn off the heat and add the green peas.

    Separately boil water.Now add the soaked and drained rice. Cook till rice is ¾ th cooked. Strain the rice and retain the water.

    Spread the strained rice over the veggies and drizzle dissolved saffron, 1 cup of strained water(from rice), 3tbsp of oil(from fried onions), mint leaves and fried onions

    Seal the vessel with tight-fitting lid. Cook on high heat for a minute, now lower the heat and cook on dum for 12-15min. Remove from heat and let it sit for 10 mins before opening the lid. Serve hot with raita
