Cooking Instructions

Place the potatoes in a large pot, cover them well with water, and add about 2 teaspoons of salt.

Bring to a boil over high heat. Reduce the heat slightly and boil for about 20 minutes or until they are tender.

While the potatoes are boiling, prepare the shrimp.

Rinse the shrimp and pat them dry with paper towels. Clean them, leaving only the tail. In a pan, heat 3 tablespoons of olive oil over medium heat. Add the shrimp and season with salt and pepper. Once they are golden on one side, turn them over. It only takes 3 to 4 minutes to fry them in total.

Remove them with a slotted spoon to a plate. In the remaining oil, add the garlic, stir, and immediately add the tomatoes and tomato paste. Mix well, and once it starts to boil, add the salt, pepper, herbs, and wine.

Boil over medium heat for about 5 to 7 minutes to thicken the sauce.

Add the shrimp to the sauce, stir gently, and let them warm together for 1 minute. Add the last tablespoon of olive oil and remove from heat. Cover and set aside until the mashed potatoes are ready.

Drain the boiled potatoes and return them to the pot. Mash them well, add the butter, and stir to melt. Finally, add the milk and a little salt. Mix well.

For serving, place 4 to 5 tablespoons of mashed potatoes in the center of each plate. Use a spoon to shape it like a nest. In the center of each nest, distribute the shrimp with the sauce and sprinkle with crumbled feta cheese. Serve immediately.
