Ingredients

  1. 250 gmsCowpea
  2. 250 gmsBrinjal
  3. 1/4 tspTurmeric powder
  4. As neededSalt
  5. 1/2 cupTamarind water
  6. Ingredients to grind
  7. 3 tbspChana dal
  8. 1 tbspCoriander seeds
  9. 4-5Red chilli
  10. 3 tbspCoconut
  11. Ingredients to temper
  12. 2 tbspOil
  13. 1/2 tspMustard seeds
  14. 1/4 tspAsafoetida
  15. 1/4 tspCumin seeds
  16. As requiredFew Curry leaves

Steps

20 minutes
  1. 1

    Soak cowpea for 3 to 4 hours.

    Pressure cook soaked cowpea for 2 whistles.

    Grind the ingredients to a smooth paste.

    Cut brinjal into long pieces.

  5. 5

    Heat kadai and add the ingredients to temper.

    Add brinjal pieces and fry it.

    Pour tamarind water and allow to cook.

    Add the pressure cooked cowpea.

    Added needed salt and mix well. Allow to boil for 1 minute. Now healthy and simple cowpea curry is ready to serve.
