A simple recipe cobbled together with basics.

Preheat main oven to 180 and cut potatoes into small wedges of about an inch

Place potatoes in a large shallow dish, drizzle with oil and salt and place in the oven for 30 minutes.

Once potatoes are starting to brown add the fish fillets to the oven and leave for another 30 minutes.

For the batter mix 1/4 cup flour with 150ml beer in a bowl. The consistency should be smooth and thick liquid. Add a liberal amount of salt and pepper.

Heat a frying pan with oil to a medium-high heat. Remove white fish from oven and dip in the batter and add to heated pan.

Fry both sides of the fish for a couple of minutes or until batter browns.

Serve fish and wedges with a side of salad, a cold beer, and a twist of lemon to taste.
