Pat the feta pieces dry with paper towels to remove any moisture.

Place the feta on the phyllo sheet, centered at the top. Fold the phyllo once horizontally, then fold the sides in, and continue folding horizontally until it forms a package. Seal the edges with a brush of water.

Place the packages on a plate, cover with plastic wrap to prevent the phyllo from drying out, and refrigerate for at least half an hour.

In a small pan, lightly toast the sesame seeds and set aside for sprinkling at the end.

Heat the oil and fry on medium-high heat until golden brown.

Once ready, place them on a plate lined with paper towels to absorb the oil. Transfer to a clean plate, drizzle with honey, and sprinkle with sesame seeds.

Serve warm.
