Ingredients

  • 2cup (Maida Plain flour)
  • 1tsp Rava(semolina)
  • 1/2 tspSalt
  • 2 tspButter
  • as requiredWater to knead
  • As neededOil for frying
  • For stuffing
  • 3 tspOil
  • 1/2 tspCumin
  • 1/2 tspCoriander seeds crushed
  • 1/2 tspFennel
  • pinchHing
  • 1Green chilli chopped
  • 1/2 tspGinger garlic paste
  • 2Onion roughly chopped
  • 1/4 tspChilli powder
  • 1/2 tspTurmeric powder
  • 1/2 tspGaram masala
  • 1/4 tspDry mango powder
  • as per taste Salt
  • 1/4 cupGram flour
  • 2tspCoriander leaves

Steps

    Firstly prepare the dough taking 2cup made,1tsp rava and add salt mix well. Now add butter crumble and mix well making sure the dough holds shape.

    Now add water little by little and knead. Knead well till you form a smooth and soft dough. Now grease 1tsp oil cover with a moist cloth and keep aside for 20min.

    For onion stuffing.. In a pan add oil and saute 1/2tsp cumin, 1/2tsp coriander seeds, 1/2tsp fennel, and pinch of Hing. Saute till it turns aromatic.

    Now add 1chilli, 1/2tsp ginger paste and saute, now add onion and saute until it change Colour slightly in low flame.

    Now add turmeric powder, red chilli powder, garam masala, aamchur, and salt and saute it well.

    Now add 1/4cup Besan and roast well. now add coriander leaves mix well. Stuffing is ready Then cool it completely.

    (Pyaz kachori) pinch a small lemon sized ball and flatten it. now scoop 1 tbsp of prepared pyaz stuffing and place in the centre.

    Get the edges together and form a bundle. close the top by pressing and flattening. gently press the edges and flatten to form a poori size.

    When the oil is medium hot, add prepared kachori.
    do not touch it for a minute or till they float. then press with the spoon to puff up. turn around and fry the kachori till it turns golden brown all over. You can make different shapes of kachori..

    Finally, serve pyaz kachori as it is or with green chutney and tamarind chutney with lots of love...
