Steps

Soak the rice for 20 mins.

Bring the water to boil. Add the soaked and strained rice. Then add 2 tsp Oil and little salt. Mix well. Cook the rice for 5 mins only. For Fried Rice, rice has to be cooked 70% only. Then strain the rice and keep aside.

Add 3 tsp Oil in a kadai. Once oil gets heat, add the white part of the chopped spring onions, cabbage, carrot, beans, capsicum, peas and sugar. Saute well for a 2 mins. For Fried rice vegetables must be raw not fully boiled.

Add pepper powder, soya sauce and salt. Mix well for 2 mins.

Add the rice and mix well for 2 mins.

Now add the green part of spring onions. Mix well. Switch off the flame let it remain in stove for 5 mins.

Now it's ready to serve with Tomato sauce or Chilli sauce or any other Sidedish of your wish.
