Chicken Blanquette (Stovetop or Pressure Cooker)
With or without a pressure cooker, this dish is delicious. If you don't have a pressure cooker, just let it simmer a bit longer.
Steps
- 1
Slice the chicken and sauté it.
- 2
Add the onion and cook until softened. Add the bacon bits.
- 3
Once everything is nicely browned, add the carrots and mushrooms.
- 4
Deglaze with white wine. Add the water, then cook under pressure for 22 minutes. If using a regular pot, simmer on low heat until the sauce reduces.
- 5
When done, season with salt, pepper, and nutmeg.
- 6
If the sauce is too thin, thicken it with a white roux or cornstarch.
- 7
I served it with fries for myself and rice for my husband.
