Ingredients

  1. For the sauce:
  2. 3large tomatoes
  3. 1medium onion
  4. 2-3greenchilli/jalapenos/Serrano
  5. 2 clovesgarlic
  6. 1 cuptomato puree
  7. 1 tspItalian seasonings
  8. 1/2 tspdried oregano
  9. 1 tspsugar
  10. to tasteSalt
  11. For the pizza crust:
  12. 1 cupmultigrain flour/whole wheat flour
  13. 1 cupoat flour
  14. 1/4 cupfine sooji/semolina
  15. 1 tspbaking powder
  16. 1/2-2/3 cupmilk or water
  17. 1/4 cupoil
  18. to tasteSalt
  19. Toppings:
  20. 1large capsicum
  21. 8-10button mushtrooms, sliced
  22. 1small onion, sliced
  23. 1 cupshredded mozzarella cheese

Steps

  1. 1

    To prepare the pizza sauce:
    Blend tomatoes, onions, garlic and green chillies to a fine puree.

  2. 2

    Pour into a large saucepan along with the dried herbs, tomato puree, salt and sugar.

  3. 3

    Bring to a boil, adjust the seasonings and simmer on low heat until you get the desired consistency; stirring often in between.
    Let cool.

  4. 4

    To make the crust:
    Preheat oven to 220 degrees C or 425 F.

  5. 5

    In a large mixing bowl, combine the flours; multigrain or whole wheat and oat flours and semolina mix well.

  6. 6

    Add oil, salt to taste and milk or water to make a soft dough.

  7. 7

    Pat this mixture into a greased 14-inch pizza pan until the edges.

  8. 8

    Make a thin crust as possible.

  9. 9

    Bake in the preheat oven for 12 to 15 minutes until lightly browned.

  10. 10

    Remove from oven.

    Chop and slice vegetables,. Grate the cheeses.

  12. 12

    Spread pizza sauce evenly over the crust.

  13. 13

    Sprinkle the chopped and sliced toppings and grated cheeses evenly.

    Return to the hot oven and bake another 10 to 15 minutes until the cheeses have melted and the vegetables have cooked.

    Remove from oven, slice into wedges with a pizza cutter or sharp knife and serve crisp, flaky, multigrain vegetable pizza immediately
