Batata Vada

Peel boiled potatoes and mash them. Heat 2 spn oil in a small pan at medium flame. Add mustard seeds when they start to crackle add asafoetida,curry leaves and ginger-garlic paste.Stir and cook for a minute. Add turmeric powder and mix well.

Turn off the flame and transfer the prepare tempering over mashed potatoes.

Now make round shaped balls from it.

Prepare a batter for vada - Take gram flour and add salt,turmeric asafoetida and baking soda. Add water little by little and stir continuously and make a smooth batter.

Heat oil in a pan over medium flame. When oil is medium hot dip each potato ball into batter and coat it evenly with hand or spoon and gently drop balls in a single batch and deep fry until light golden brown.

Drain excess oil using perforated spoon and transfer them on a plate. Batata Vada is now ready for serving.
