Chilli chinese noodles is my most favourite, here I have used hakka noodles you can use the regular any other of your choice.
This dish is loaded with vegetables like yellow bell pepper, carrot, cabbage, onions, mushrooms and and you can add more of your choice
You can add tofu or paneer to add some protein to your noodles.

Ingredients

30 minutes
2-3 people
  • 200 gramnoodles
  • 1 tbspoil
  • 1 tspsalt
  • as neededWater to boil
  • 1 tspOil to spread on noodles
  • To prepare chilli vegetables
  • 1/2 cupchopped capsicum
  • 1big chopped onion
  • 1/2 cupchopped carrot
  • 1/2 cupchopped cabbage
  • 5-6chopped garlic
  • 2red chillies silted
  • 2green chilli silted
  • 1 tbspsoya sauce
  • 1 tbspchilli sauce
  • 1 tbsptomato sauce
  • 1 tbspvinegar
  • 1 tspblack Pepper powder
  • to tasteSalt
  • For garnish
  • 2 tbspspring onions

Steps

30 minutes
  1. 1

    Firstly Cook the noodles as per the manufacturer’s instruction until they are 90% cooked. Drain the water, I used salt and oil while boiling.

    Add little oil to the noddles to prevent them to get sticky and coat them well.

  3. 3

    Heat sesame oil in a pan. Add garlic, dry red chilies, onion, green chilies and saute for a minute.

    Add yellow bell pepper, carrot, beans and cabbage and saute and other vegetables for more minutes, don't overcook otherwise the crunch will not be maintained.

    Now add salt, black pepper powder, vinegar, red chili sauce, and green chili sauce and mix well.

    Add the cooked noodles and toss gently.

    Garnish it with some spring onions and serve hot.
