Grilled corn capsicum sandwich

In a bowl, mix all ingredients except for the cheese, butter and bread. Saute them in a pan with a little butter.

Spread some butter on bread slices. Evenly spread the corn and capsicum stuffing on the bread slice.

Now place the sandwich in a preheated sandwich maker.

Grill for a few minutes till sandwich become crisp and golden. You can also toast the sandwiches in a hand held stove top toaster or in the oven.

Remove and slice them. Serve sweet corn capsicum sandwich hot and warm with tomato ketchup or mint coriander chutney.
