Take a cooker and boil 2½cup water. Add bottle guard, pumpkin, potatoes, and peas, brinjal (All have to be roughly chopped). Add salt, turmeric, and sambar masala, and toor dal to it. Cover with lid. Wait for 5-6 whistles on medium to low flame.

Take a pan heat up the oil. Add curry leaves and mustard seeds to it. Within 30 seconds Add ginger, garlic paste. After 30 -40 seconds add a thin slice of chopped onion and cook it until golden brown. Then add tomatoes and cook it for about 1 minute. Then add all spices. Salt, red chili powder, coriander powder, sambar masala, garam masala and stir it while cooking. Cook it until oil releases.

Then add vegetable gravy to it and give it a good mix. then add tamarind water to it. Or add some water if required. Boil it for 5 minutes. And it's ready. Add some finely chopped coriander leaves to it.

Sambhar is ready for serve. Enjoy with idli and dosa.
