Dates-Cashew Bites or Khajur Pak

In a large kadhai, heat ghee and add chopped cashew. Roast on low to medium flame till it turns golden. Transfer to a bowl and keep aside.

Add dates to the kadhai and keep stirring till the dates soften. Will take around 3-4 minutes. Now add roasted cashew and mix well. Turn off the flame and let it cool for 5 minutes.

Now apply ghee on both your palms and take a portion of khajur pak and flatten in. Place a marie biscuit and cover from all the sides with khajur pak. Place another marie biscuit and cover completely.

Likewise make other rolls. Now cut into 4 pieces. Khajur pak is ready.

You can stuff the pak with wafer biscuits also or can simply keep it as khajur balls.
