Bitter leaf soup (ofe onugbu)

Bitter leaf soup derives its origin for the Igbo's. this soup is super delicious and unlike the name suggest the soup is not bitter at all its not suppose to come out bitter because the leafs are suppose to be washed super clean. A little trick I learnt is to cook the fresh leafs with little potash and voila all the bitterness would disappear rinse in cold water and the bitter leaf is ready to use. Ofe in Igbo means soup hence the name ofe onugbu meaning bitter leaf soup. I've been enjoying different soups from different region in Nigeria variety they say is the spice of life.

Wash the bitter leaf very well and set aside. season,spice and Cook the goat meat ponmo and dry fish together.

When the meat is cooked and tender add ogiri, seasoning cubes and salt and water to the meat careful not to add too much seasoning as the meat stock already contains seasoning.

Prepare the achhi (cocoyam powder) by adding palm oil to it and mixing it into a smooth paste add this to the soup. Mix together

See how the soup thickens immediately allow to boil then add the bitter leaf to it mix together and allow to cook for about 5mins

And its ready. Serve with desired swallow I served mine with semolina
