One of the things I love is golden sautéed onions. I wanted to make some sandwiches and decided to bake my own bread for them. I thought these little rolls would be perfect for that.

Combine all the ingredients for the sponge and let it rest for 40 minutes. Cover with a towel, but don't let it touch the dough. The sponge should ferment and double in size.

Mix all the bread dough ingredients by hand or with a mixer, then add the sponge. Knead with the mixer for about 10 minutes. If kneading by hand, place the dough in a lightly oiled bowl and let it rest for about 1 hour. If using a mixer, leave it in the same bowl. Either way, the dough should ferment and double in size.

Melt the butter with the oil in a skillet and sauté the onions until golden. Once the dough has risen, divide it into 8 equal pieces and shape them into round balls.

Lightly flour your work surface. Roll each ball into a circle and place some of the sautéed onions in the center. Bring the edges of the dough together to seal and shape into a square.

Spray a baking sheet with vegetable oil and place the dough squares on it, spaced apart. Melt a little butter and brush it over the tops of the rolls. Add a bit of onion on top of each roll.

Preheat the oven to 500°F (260°C) and bake the rolls for about 12 minutes, until golden brown.
