Ingredients

20-30mins
02-03 servings
  • 4small size brinjal
  • 1Onion
  • 1tomato
  • 1tspCumin
  • as per tasteSalt
  • 1 pinchPepper
  • 1.2 tsp Dry mango powder
  • 1/2 tsp Coriander powder

Steps

20-30mins
  1. 1

    Peel,wash and chop onion and chop tomato. And fry till half cook.

    Grind onion and tomato to make paste. Heat oil in pan and add paste and stir.

    Add cumin. And roast

    Now add all spices and mix well till it's leaves oil on sides

    Now add half cut brinjal in this

    Mix well so that it covers all sides

    Now cover it and keep on gas on low medium for 10 mins.after intervals toss/flip sides and make sure don't burn.

    Garnish with coarinder leaves and onion rings. Serve it with curd and roti.
