Hummus

I love this #middleeastern chickpea dip made with tahini and other spices. I find this to be the healthiest dip. It goes so well with pita bread/ flat breads ,kebabs, falafel. In the middle eastern countries, it is served in a mezza platter ( appetizer) along with Baba Ganoush ( Arabic style Baigan Ka Bharta ), Tabboluleh ( salad consisting of chopped parsley, onion, cucumber, tomatoes, mint, bulgur and seasoned with olive oil, lemon, salt and Sumac ) with flat breads.
My son loves this so I started preparing it at home and customised it as per our taste.
I love spicy hummus and beetroot hummus too.
So today I am going to make the basic hummus with fresh chickpeas and tahini.
It doesn't require much time to make the final product but of course the preparation takes little time , like soaking of chickpeas overnight , boiling it for at least 50 mins to 1 hour in a covered pot till it becomes soft, cooling it and taking out the cover/ chilka from the boiled chickpeas in order to get a super smooth hummus which takes another half an hour, preparation of tahini if you are making fresh at home, juicing the lime, peeling the garlic, grinding the black pepper and the Cummin if you are using freshly grounded.
But you can cut short all this time by using canned chickpeas, ready to use tahini, black pepper powder and Cummin powder. But there will be a vast difference in taste, after all you know fresh always taste better.

Wash and soak the chickpeas overnight or at least for 6-8 hours.

Boil for 50 mins to 1 hour till it gets cooked and turns soft (don't pressure cook it). Let it cool and then take out the cover/ chilka of the chickpea in order to get a smooth hummus.

While the chickpeas are boiling, prepare the tahini - dry roast the sesame seeds in a pan, it will hardly take even 2 mins, be careful don't over brown it...take it out in a plate and let it cool a bit. Then in a mixer grinder jar, grind the sesame seeds first and then add olive oil and mix again your fresh tahini is ready.

Your freshly prepared tahini will look like this.

Peel the garlic, juice the lemon, grind the black pepper and Cummin if your are using freshly grounded.

Now in a big size mixer jar, add in the garlic, tahini, black pepper powder, Cummin powder, lemon juice, salt and give it a quick mix till the garlic are roughly grounded.

Then add the chickpeas and add water as required little by little so that your hummus doesn't become too runny. If your mixer grinder is not powerful then add the chickpeas in two or three parts so that it becomes a smooth paste and you can grind it without any problem, scrap the jar in between. It will hardly take 10-15 minutes depending upon the mixer grinder or the food processor being used. Your HUMMUS is ready. Garnish it and serve it with your favourite kebabs,breads etc. to your family.
