Thai Eggplant in Indian way😃
Steps

Peel and wash potato, garlic, onion and ginger. Grate tomatoes and ginger. Chop eggplant and potatoes.

Heat oil in a wok. Add cumin seeds and when cumin seeds splutter add chopped garlic. Saute for 30 seconds. Add chopped onion saute for 1 minute. Now add grated tomato and ginger.

Cook on low flame till it is mixed. Add all dry masale and mix.

Add chopped potato and eggplant and mixed well. Toss well. Add water and place the lid and cook for 10 minutes on low flame. Switch off the flame.

Open the lid and add chopped coriander leaves and garam masala and mix.

Serve hot with chapatti or parantha.
