Rich Panang Pork Curry

Ingredients

  1. 3 tablespoonsPanang curry paste
  2. 1.1 lbspork (about 500 grams)
  3. 1 cancoconut milk (about 13.5 oz or 400 ml)
  4. Sliced kaffir lime leaves, to taste
  5. Sliced red chili peppers
  6. 1 tablespoonpalm sugar
  7. 1 tablespoonfish sauce

Cooking Instructions

    Slice the pork thinly and marinate with 1 tablespoon fish sauce for 30 minutes.

    Simmer the pork with the thin part of the coconut milk over medium heat for about 20 minutes until the coconut milk reduces by half.

    Stir-fry the curry paste with the thick part of the coconut milk until the oil separates and it becomes fragrant.

    Add the pork and stir-fry, then add 1 tablespoon fish sauce and 1 tablespoon sugar.
