Panaeng Curry with Pork

Ingredients

2 servings
  1. 1 1/2-2 tablespoonsred curry paste (about 50 grams)
  2. 1 cupcoconut milk (250 ml)
  3. 1/2 cupwater (120 ml)
  4. leavesKaffir lime
  5. Sliced red chili peppers
  6. 7-10 ouncespork shoulder (200-300 grams)
  7. 2 tablespoonsfish sauce
  8. 1 1/2-2 tablespoonspalm sugar

Cooking Instructions

    Add a little coconut milk to a pot and heat until it separates. Add the curry paste and stir until fragrant. Gradually add the remaining coconut milk.

    Add the pork and stir until cooked. Add water and simmer until the coconut milk reduces (about 15-20 minutes). Add palm sugar and fish sauce.
