Puttu is a steamed rice flour and coconut log. I have used the store brought rice flour. Roast the rice flour lightly before making puttu. If you dont have a puttu maker or puttu vessel, you can make it in an idli maker. I have used the very old puttu vessel which my mother in law used to use while making puttu.

Puttu is a steamed rice flour and coconut log. I have used the store brought rice flour. Roast the rice flour lightly before making puttu. If you dont have a puttu maker or puttu vessel, you can make it in an idli maker. I have used the very old puttu vessel which my mother in law used to use while making puttu.

Take a cup of puttu flour and add it to a pan. Roast it slightly.

Add salt and mix well. Use 1/3 cup water or add accordingly.

Sprinkle water all over. Mix the rice flour with the water with your fingertips. The amount of rice flour to water ratio is important. To check the texture of the flour, gently press a small portion of the flour between your palms. It should form into a lump. When you press this flour lump more, then it should break and crumble. Puttu becomes nice if you break all the tiny lumps in the flour.

Pour 3 cups of water in the base vessel of the puttu maker. Keep on heat and let the water become hot.

In the meantime, place the perforated disc inside the cylindrical vessel. Add 3 tablespoons freshly grated coconut in the cylindrical vessel and spread evenly. Next add the puttu flour till it reaches half of the cylindrical vessel.

Then again add 3 tablespoons freshly grated coconut and spread evenly. Again add the puttu flour.

At the top again add 3 tablespoons freshly grated coconut and spread evenly.

Cover the top with lid. When the water in the base vessel starts to boil, place the cylindrical vessel on top of the base water. (Photo of my in-laws very old puttu vessel). Steam the puttu on medium flame for about 8-9 minutes. Off the flame. Remove the cylindrical vessel from the base vessel and allow the puttu to cool for about 5 minutes.

With the help of a long wooden stick, remove the steamed puttu on to a serving plate. I had greased the inside of the puttu vessel so the slight change in color, which may not be required.

Serve hot puttu with chicken curry, kadala curry or any veg or non-veg curry dish. It also taste good with vegetable stew or potato stew. You can also serve some bananas or papad with it.
