Cooking Instructions

In a pressure cooker, bring half an onion, the 2 bay leaves, and the 5 peppercorns to a boil with a generous handful of coarse salt over high heat.

Rinse the blood from the beef tongue.

Add the tongue to the pressure cooker and close the lid.

When steam starts to escape from the valve, reduce the heat slightly (to medium-high) and cook for about 1 hour.

While the tongue cooks, chop the cilantro and onion. Set aside for serving.

After about 45 minutes, when the tongue is very tender, remove the skin.

Cut the tongue into small pieces for tacos.

Store the tongue in a container to keep warm for serving each taco.

Heat the tortillas and keep them in a tortilla warmer or container to serve hot.

IMPORTANT: Serve each taco hot! Take a tortilla from the warmer (cover the rest). Place the tongue on the tortilla (cover the tongue container again).

Season the tongue with salt to taste, add onion and cilantro as desired, and add your favorite salsas. Fold the taco and enjoy!
