Ingredients

5 hrs.
4 tacos
  1. 1beef tongue, about 1.3 to 1.5 lbs (600–700 grams)
  2. 3-4bay leaves
  3. 1 teaspoondried dill
  4. 1 tablespoonchicken bouillon powder
  5. 1-2large garlic cloves
  6. 1/2onion
  7. 1small bunch of cilantro

Cooking Instructions

    Cook the beef tongue with all the ingredients except the cilantro for 4 to 5 hours.

    About three-quarters of the way through cooking, add the cilantro. Check the tenderness of the tongue and season with coarse salt and black pepper.

    Once the tongue is fully cooked and tender, remove the membrane and slice it for tacos.

    Serve in tacos with fresh, cleaned cilantro, chopped onion, and red and green hot sauce.
